Easy Chicken in Pesto and Yoghurt
A simple dish like this easy chicken and pesto and yoghurt, works well for a healthy lunch or dinner. Its simple and easy to make, and it gives you a great reason to fire up the barbecue as well.
We always prefer fresh ingredients when we prepare meals.
- Serves about 6 – 8 people
- Prep – 10 – 15 minutes
- Marinate – 1 or 2 hours
- Cook 8 – 10 minutes
- Barbecue grill with low heat and hood
Easy Chicken in pesto and Yoghurt
Ingredients
- 8 Chicken breast fillets
- 100 g plain yoghurt
- 1 jar barilla Pesto Rosso
- ½ Tsp Cayenne Pepper
- 3 sprigs fresh basil
Method
- Prepare marinade by mixing Barilla Pesto Rosso with yoghurt and cayenne pepper.
- Tear or roughly chop the basil leaves and add them to the marinade, mixing gently.
- Add the chicken, cover and leave to marinate for 1 or 2 hours in the refrigerator. The marinade may be prepared the day before if you prefer.
- Preheat barbecue and cook over a low flame with the hood down, turning occasionally, for 8 – 10 minutes.
- Serve immediately with a fresh green salad.
Chef tip
For an extra kick, add a thinly sliced red chilli to the marinade. And don’t forget this recipe would work perfectly with chicken thighs as well.
